In a medium pot combine:
- 2 cups almond milk (or other plant based milk)
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- juice of 1/2 an orange
- 1 tsp vanilla
- pinch of salt
Bring to a gentle boil on medium heat then add:1 cup quinoa (pre-washed or rinsed) Place a lid on and cook until most of the liquid has been absorbed and the quinoa has burst. Remove from heat. Stir.
Mix together in separate bowl:
- 1/2 cup cold almond milk
- 2 tsps arrowroot powder
Pour over cooked quinoa.
Serve immediately sprinkled with coconut sugar, fresh orange slices and fresh figs.
OR to save for later and have cold:
Place into a small pie plate and cover with plastic wrap or dish with a lid. When ready to eat, cut into wedges and serve with your favourite yogurt, fresh orange and warmed fig jam.
OR if you would like to re-warm it place the wedge into a pot with a little milk (of your choice) and break it up gently. serve with your desired toppings. ENJOY!
